Roasted Pumpkin Wedges

Ingredients
  

  • 1 Small sugar pumpkin also known as pie pumpkin
  • Olive oil
  • Fresh rosemary sprigs from your garden
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Wash and dry the sugar pumpkin. You can leave the skin on for added texture and flavor.
  • Slice the pumpkin in half and scoop out the seeds and stringy bits.
  • Cut the pumpkin halves into wedges, about 1-inch wide.
  • Place the pumpkin wedges on a baking sheet or roasting pan.
