Roasted Pumpkin Wedges
Ingredients
- 1 Small sugar pumpkin also known as pie pumpkin
 - Olive oil
 - Fresh rosemary sprigs from your garden
 - Salt and pepper to taste
 
Instructions
- Preheat your oven to 400°F (200°C).
 - Wash and dry the sugar pumpkin. You can leave the skin on for added texture and flavor.
 - Slice the pumpkin in half and scoop out the seeds and stringy bits.
 - Cut the pumpkin halves into wedges, about 1-inch wide.
 - Place the pumpkin wedges on a baking sheet or roasting pan.
